Mixed "Hodgepodge"

Small batch 1 gallon mash ferments of over 24 varieties of Chilies that were grown from seed in Indiana and produced in a commercial kitchen Compliant with the Department of Health. There is everything from Bell Pepper to Carolina Reapers in these mashes. Some fully ripe (red), some yellow, some orange, lots of green pods. They do make a great sauce, but heat level and flavors may vary a little. The stems were removed by hand before the chili peppers (seeds and all) were mashed. This product will need further processing.

They will ship in square glass flip top “fido jars” that you can reuse. These are made with 3% Salt per weight of ingredients. They are over 2500 grams of the chili peppers, approximately 300 grams of white onion, 90 grams of Garlic, and approximately 89 grams of sea salt. Nothing else. Fermented, then aged for months.

You’ll unfortunately be paying mostly for the glass jar, packaging, and shipping. Each Jar and ferment weigh almost 10 pounds. The packaging can handle two ferments, so that would be best to order.
